Terroir: Santenots du Bas, gentle slope, deeper iron-rich red soil with large rocks, and sandy texture
Viticulture: Lutte raisonnée (organic and biodynamic methods)
Vinification: 100% de-stemmed, indigenous yeast fermentation, minimal punch-downs. Aged for 18 months in barrel (25% new oak). Nicolas strives to use sulfur only prior to bottling. Total sulfur: 20-45 mg/L.
