Vinification: 100% de-stemmed, 3-5 days' cold maceration (10°C), mostly pump-overs with some punch-downs, indigenous yeast alcoholic fermentation, 15-20 days' cuvaison. Malolactic fermentation in concrete tanks, 1 year aging in oak barrels (30% new), 6 additional months' blending before bottling.
