Vinification: 100% de-stemmed, 3-5 days' cold maceration (10°C), mostly pump-overs with some punch-downs, indigenous yeast alcoholic fermentation. Malolactic fermentation in concrete tanks, 12 months' aging in oak barrels (20% new), total élevage 20 months.
