Vinification: 100% de-stemmed, 15 to 20 days alcoholic fermentation with indigenous yeasts and maceration in open wooden vats. 18 months aging in barrel (15% new oak).

Average yield varies between 125 and 290 cases. The name of this lieu-dit comes from a traditional Burgundian word to describe a vineyard surface that a man could hoe in a day.
