
Tenuta Olim Bauda Gavi di Gavi
Grape variety: Cortese 100%.
Vineyard: grapes are grown on the vineyards in the community of Gavi at 300 meter altitude. Soil profile: clayey marls.
Tasting notes: it has a straw colour. A fine bouquet of good intensity and persistency with floral flavours. To the palate it is fresh soft, harmonious and well-structured with a well balaced minerality.
Vinification: grape destemming and pressing take place on the evening following harvest. Then, the must is poured into stainless steel vats, where it undergoes maceration along with skins at a temperature of 12°C. After skin separation, alcoholic fermentation begins and goes on for about 15 days at a temperature of 15-16°C; this temperature is needed to preserve the wine’s delicate flavour. Later on, a refinement will take place in stainless steel vats untill May.
Wine release: wine is released to the market in the month of May/June following harvest.
