The hillsides of Zerzilles a Chaume have long been known. Facing south east, it is perfectly suited to the production of sweet wines exceptions. Thin soils, poorly developed on a base of Carboniferous age. Presence of coal shale and sandstone.

Terroir: Zersilles lieu-dit, thin/poor soil of shale and sandstone on Carboniferous-era bedrock, facing southeast.
Viticulture: Certified organic (Ecocert)
Vinification: Gentle pressing, indigenous yeast fermentation in 1 to 3-year-old Burgundian barrels . Aged in older barrels, racking and blending in tank for 1 month before bottling.
At harvest, pickers pass up to five times through the vines to be sure they pick only grapes with concentrated botrytis.
