Coteaux du Layon on freshness, naturally concentrated like all our sweet wines, but without the action of botrytis.

Light and pure, more on white fruit than candied. As an aperitif, but it will also go well with salads with foie gras or gizzards, with smoked fish and cooked or parsley cheeses. Its freshness will also suit unsweetened fruity desserts, such as apricot pies.

Vinification and Aging: Intervening at a minimum does not mean: deciding nothing. We take the responsibility not to sulphite the juices leaving the press, not to add selected yeasts, not to chaptalize ... Slow pressing - Natural settling 24 h - Slow fermentation in Burgundy barrels of 3 and 4 wines. Total alcoholic and malolactic fermentation.
