This wine comes from a selection of Bourgeois’ youngest Pinot Noir vines in Sancerre, hence its name “Les Jeunes Vignes”. 20% of the fruit actually comes  from the iconic Monts Damnes site just behind Chavignol. 

Varietal Composition: 100% Pinot Noir

Elaboration: The juice is obtained by draining (“bleeding”) vats of Pinot Noir juice after 24 hours of cold maceration. Alcoholic fermentation takes place in thermo-regulated stainless steel tanks (60 – 65 °F). The wine is then aged for 4 – 5 months on its fine lees.

Tasting Notes: Layers of bright, elegant red-berry fruit are coupled with a refreshing salinity stemming from the unique minerality of Sancerre. A fantastic oyster rosé!
