Vinification: Our red Châteauneuf-du-Pape is made in the traditional way. The vines are between 35 and 75 years old. The grapes harvested manually, are destemmed at 60%. Fermentation is followed by thermoregulation, it lasts 25 to 35 days.
Breeding: The wines are aged in oak barrels, in 1/2 muids, in concrete vats and barrels over a period of 12 months.
Tasting: Our Tradition has aromas of red fruits and black fruits; blackberry and blueberry, as well as spicy notes.
It is a concentrated and structured wine, it is a wine for aging. We recommend tasting it in 6-8 years.
