Camille Savès

The domaine was created in 1894, and the fourth generation of family ownership is represented by Hervé Savès, who replaced his father Camille in 1982. They have 25 Grand Cru acres in three of Champagne’s most important villages – Bouzy, Ambonnay and Tours-sur-Marne.

All of the wines are fermented in enamel-lined steel tanks, but then go into a combination of steel tanks and neutral Oak for ageing, before the 2nd fermentation in bottle. All wines receive a minimum of four years on the lees, and malolactic fermentation is blocked for all wines. The style is based on crisp minerality and fresh, biscuit-laced fruit. There is an extra dimension of citrus cutting through, making these wines of great finesse with rich fruit lurking just beneath the surface. The Savès wines have developed a strong cult-like following in recent years, and the small quantities available to us tend to disappear quickly.

The Savès family has lived in the heart Bouzy since 1894, as indicated in some registers that still exist today.  Eugène Savès, an agricultural engineer by trade, founded the house  and was a persuasive man of character and a real lover of the land, he soon realized how important it was to produce his own wine and he threw himself into the adventure of wine production.  Since then, over the years, Louis, Camille and Hervé have followed in their father's footsteps as heads of the House, perpetuating the family values that established its reputation.  Hervé now tends a vineyard of about ten hectares on "terroirs" classified as exclusively Grand Cru and Premier Cru.  Our vineyards have an average lifespan of over 35/40 years and we tend them with great care, respecting the traditions of the Champagne region and protecting the environment.  Pest management, natural fertilizers, tillage and maintenance of the soil, the use of endemic predators, careful tying and thinning show how hard we strive to invest our Champagnes with the excellence and unique character of this pretigious "terroir" of origin.
