Wine Information
Situation: 5 plots make up this appellation ranging from an altitude of 230 to 300 meters. 80% are between the hillsides of 1er cru below the village, the others are on the heights on less earthy soils.
Production: 15,000 bottles on 3.5 hectares.
Grape Varieties: 100% Pinot Noir, 11,000 vines / hectare, low vines.
Culture Mode: The estate obtained Reasoned agriculture certification in December 2008. No use of herbicide and insecticide since 2003. A reflection on bio-dynamism has been underway since 2011.
Harvest: Manual. The grapes are then transported in small boxes fairly quickly to avoid crushing the berries and the risk of oxidation.
Vinification: the harvest is completely sorted, destemmed before being put in tank or it will remain approximately fifteen days. Cold maceration (8 ° c), for 6/8 days with pumping over the juice. Follows the alcoholic fermentation for 8 to 10 days with punching down in order to extract the different components of the film. Separation of the drop and press juices, settling in order to eliminate the solid parts then entonnage (barrels).
Breeding: 12 months in oak barrels, 10% new. Aging on the lees, racking in July. Natural malolactic fermentation.
Bottling Process: Light filtration on earth. Bottling is done at the estate with our own bottling line in November-January.
Tasting Notes: Red fruits, finesse and concentration are the key words to define the qualities of this wine. Keeps 3 to 10 years.
