Wine Information
Vinification: Hand picked, 80 to 100% de-stemmed depending on the vintage. Vatting period of about 15 to 18 days, in open oak vats at a low temperature (controlled by thermo-regulation).
Maturation: In oak casks for between 16 and 20 months (between 60 and 100% new oak depending on the vintage). Bottled with no fining and no filtering.
Aging in Bottles: Depending on your personal tastes and the vintage, between 6 and 30 years.
Drink It: With all kinds of light meat (chicken, lamb, etc.) and cheeses.
