VINE YARD MANAGEMENT

YIELD

VINIFICATION
•  Total destalking for the Syrah and 
the Mourvèdre grapes
•  Pre-fermentation cold maceration for 3 days
•  Alcoholic fermentation and maceration for 36 days
 
MATURING 
•  In 225 litres new barrels previously containing 
one or two vintages 
•  16 months without drawing off 
•  Weekly lees stirring during winter
 
TASTING
•  Deep ruby colour 
•  Nose has aromas of coffee with presence of ripened
red fruits 
•  Fine tannic body on the mouth with blended tannins 
•  Spicy finish with compact, wholesome flesh
