Wine Information
Location: Hautes Cote de Beaune
Age of the vine plants: 30 years old
Yield and production: 40 to 45 hl/ha. average of 7000 bottles per year.

Vinification
Hand-harvested, the bunches are pressed whole, then fermented and matured in older oak barrels for 12 months.

Tasting notes
Visually: Our white Burgundy has a crystal clear, limpid appearance, frequently with green tints.
On the nose: This wine shows in its youth white flowers, lilies and ferns, which evolve into notes of hazelnut. As it ages, the wine shows honeyed, sometimes buttery accents, with additional aromas of spice and sugared chestnuts, and often mentholated fruits.
On the palate: The wine is round at the beginning, but its clear acidity gives it a tension that leads to a beautiful mineral finish.

Drinking tips
Our white Burgundy is versatile and wonderful with food. Its liveliness makes it a great aperitif wine. Its aromatic range and persistence make it a star with fish, shellfish and seafood. Serve around 12 C. Drinks best within the first five year of its life.
