Raymond Dupont-Fahn

Son of Michel, Raymond Dupont-Fahn is a fifth generation wine maker and has worked closely with his father and grandfather from an early age.  In just a short career as winemaker he has produced some stunningly great wines from humble appellations Auxey and Bourgogne. After his “Bac d’Oenologie” diploma at 21, he started to manage his own Domaine of five hectares in 2001. Within this Domaine, he has a vineyard of particular interest. His grandfather purchased the unplanted land in 1975 with the appellation Mersault le “Dos d’Ane”. Part of the terrain also lies on les “Chaumes des Perrières”. His grandfather realized that the soil was not deep enough to plant correctly and asked the permission of the “I.N.A.O.” to add another 20 cm of topsoil. This was granted to him and this vineyard was completed. This seemed to cause somewhat of a scandal with the other viticulteur of Meursault who got together and had it declassified to Bourgogne blanc as it remains today. However the 27 years old roots lie very deeply below the earth and rock of the original Le dos d’âne appellation and benefits greatly from the climate of “Les Perrières”.  Raymond does not use pesticides in the vines, he does not chaptalize his wines, he usually chooses to harvest on the early side in order to achieve wines with greater acidity and less alchohol.  Most élévage for the wines is 20% in new oak and all his barrels are under 3 years of age.
