Terroir: Multiple village-appellation parcels in Volnay and Pommard, lower and flatter land. Mix of brown soils from clay to silt and rocks (rich but shallow)
Viticulture: Lutte raisonnée (organic and biodynamic methods)
Vinification: 100% de-stemmed, 10 to 15 days cold (14°C) soaking, 6 to 8 days indigenous yeast alcoholic fermentation. 1 year aging on fine lees, 1 racking, unfined, unfiltered.
