2008 Bourgogne Rouge
During harvest time, a team of pickers cut all grapes by hand and sort them on site. The winemaker ensures that all vineyards are picked at perfect maturity, in ten days.
Once harvested and returned to the field, the grapes are placed on a table where they are sorted again by hand, then scratched. The pulp, juice and grape skins are then directed to a tank where they remain for about two days for fermentation and maceration, punctuated by punching down and pumping daily.
After this period, the fermented juice is transferred from the tank to oak barrels for aging for 18 months.
