Place: Puy Servain whose origin comes from "Puy" = summit and from "Servain" = strong wind, because it is a very windy climax.
Type of soil: clay-limestone; very overhauled. Heterogeneous soil with very calcareous areas at the top of the hills
Serving suggestion: drink very cold, as an aperitif, with foie gras, white meats and parsley cheeses.
