The old vines produce a rich and powerful wine that is not common in the Côte de Beaune.

La Dominode belongs to the 1er cru les Haut-Jarrons. It is at the heart of this lieu (place). The yields are naturally low but regular because the vines were planted in 1902. The exposure to the east is ideal and the ground is a mixture of stones and clay.

I have been vinifying la Dominode since 1979 and it has undoubtedly the most consistent vines of the domaine - always low yields and beautiful maturity of the grapes. The quality and the age of the vines contribute to this consistency. There are, naturally, annual variations according to the vintage and the weather, but the variations are fewer than in other vineyards. The color is always deep, tannins are full and rich. It is a wine that demands a few years of ageing, often more than 10 years, before it is ready to be tasted. A wine to be cellared.

Viticulture: Lutte raisonnée (converting to organic)
Vinification: Mostly de-stemmed (20% whole-cluster in good harvest), indigenous yeast fermentation. Mostly pump-overs, some punch-downs. Aged for 18 months in barrel (0-50% new oak), short blending period in tank before bottling.
